Chicken with Peach Slices and Couscous

Ingredients
415g Del Monte® Peach Slices in Juice
4 boneless chicken breasts
150g of couscous
100g of pumpkin seeds
100g feta
1 shallot
Light honey mustard dressing, to serve
Coriander, to garnish
HERE'S ALL YOU NEED TO DO:
STEP 1:
Season the chicken breast with a sprinkle of salt and pepper, then roast at 190°C for 30-35 minutes.
STEP 2:
Shred the chicken breasts and leave to cool.
STEP 3:
Follow the instructions on the pack of the couscous to prepare.
STEP 4:
Drain the Del Monte® Peach Slices in Juice and combine with the chopped shallots, crumbled feta, coriander and couscous.
STEP 5:
Add the torn chicken breast and mix together.
STEP 6:
Add light honey mustard dressing and serve.
